This air fryer delicata squash is ready in 15 minutes with no peeling required. Just slice, season, and air fry at 400°F for tender, caramelized results with crispy edges.
½teaspoondried rosemary or garlic powderoptional, for savory
1teaspoonhoney or maple syrup + pinch of cinnamonoptional, for sweet
Instructions
Rinse the delicata squash under cold water, scrub gently, and pat completely dry. Remove any produce stickers.
Cut the squash in half lengthwise. Use a large spoon to scrape out all seeds and stringy bits.
Slice into ½–¾ inch (1.5–2 cm) half-moons or rings for even cooking.
In a large mixing bowl, toss the squash slices with oil, salt, pepper, and your chosen seasonings until evenly coated.
Preheat the air fryer to 400°F (200°C) for 3–5 minutes. Lightly spray the basket with oil.
Arrange the slices in a single layer with space between them. For cheesy versions, stand slices skin-side down.
Cook at 400°F for 8–10 minutes. Shake the basket or flip halfway through (unless standing skin-side down).
Check for doneness. The squash is ready when fork-tender and edges are golden. Add 2–3 more minutes if needed.
Finish and serve. While hot, add extra salt, a drizzle of honey or balsamic glaze, and fresh herbs or parmesan if desired.
Notes
Chef's Tip: Don't overcrowd the basket — cook in batches if needed. Overcrowding causes steaming instead of crisping.
